The 2021 Maple Syrup season is off to an early start and we are expecting a great crop this year!
Our energenic tapping crew headed out to the bush with drills in hand as they tapped the trees over a span of three days from Feb 21 – 23. The weather was favourable for the sap to start flowing from the freshly tapped trees with temperatures above freezing, so we instantly started collecting sap.
It didn’t take long for the storage tanks to quickly fill so we fired up our wood pellet evaporator, for the first time in a year, and started to process the sap into syrup.
Our first boil was February 24th.
